Tahini

“Tahini” or “tahina” is a condiment made from toasted ground hulled sesame. Tahini is served as a dip on its own or as a major component of kofta, hummus/hommous, baba ghanoush, mutabbal (eggplant dip), halva and other dishes. It’s used in the cuisines of the eastern Mediterranean region, from the Balkans, South Caucasus and Middle East to Northern Africa.
